An Ode to Dumaguete.

For one evening at Casa Paquita, we told the story of Dumaguete the best way we know how, through food.

Every course was inspired by a place, an ingredient, or a memory of Negros Oriental. From the bright acidity of Binakhaw, to the lush foothills of Mt. Talinis, the comforting warmth of Halang-Halang, the bounty of Apo Island, the nostalgic sweetness of Santol, the richness of slow-braised Angus paired with local flavors, and ending with Kabog, a humble grain that has long been part of our heritage.

This wasn’t really about reinventing tradition. It was about giving familiar flavors a different voice while staying rooted in where they came from.

To everyone who joined us at Casa Paquita, thank you for allowing us to share our love letter to the city we proudly call home. Thank you Philippine Star for the write-up ⭐️

Before there were specialty lattes, there was the Dumaguete Sari Sari. Born in the city’s Painitan, where market vendors blended coffee, tsokolate, and milk into a comforting morning drink. Named after the Bisaya word for “a little of everything,” it captures the flavors that have long fueled Dumagueteños at dawn. Our version pays homage to that tradition with tablea from the cacao planters of Bais, an espresso shot, and condensed milk. A tribute to a local classic.
