A tribute to a Bisaya phrase — “Bahala’g Saging Basta Labing”. It means something like, “even when we only have bananas to eat for as long as we have love, everything will be fine.” It means being content with a simple, humble life. Or finding joy and togetherness even in difficult financial times.

Binakhaw - Dumaguete’s heirloom kinilaw.

A dish deeply rooted in Negros Oriental, binakhaw is Dumaguete’s own expression of kinilaw. Fresh fish cured in tuba or sinamak, shaped by what the land and sea provide. What makes it truly unique is the use of the dungon seed, lending a distinct aplod taste (tart) that signature tang plus a subtle crunch from the chicharon that locals instantly recognize.

More than flavor, it speaks of place. Of coastal communities that relied on fresh catch, native trees, and instinctive cooking passed down through generations. It’s a dish that feels both delicate and bold—simple in form, yet rich in story.

In every bite, binakhaw carries the heritage of Dumaguete, unmistakably local, quietly extraordinary.
