Ingredients:
3kls Baguio pechay
1kl carrots
1/4 onion leeks
3/4 cup fresh garlic
3/4 kl red onion
1 cup sugar
3/4 Patis
2 cups chili flakes
1/4 kl salt ( use for Baguio pechay for 5 hrs, then wash with running water and drain)
* Sliced carrots, leeks, set aside
* Sliced red onion, garlic, ginger and blend well w/ Patis, sugar, chilli flakes ( to make it more spicy, you may add chilli powder or labuyo)
* Once it becomes paste, set aside 1/4
* Use 3/4 to mix with salted b. Pechay, carrots, onion leeks.
* Put in a container, preferably glass , to ferment for 1 day
* Serve the kimchi
