Every hydration level has its place depending on the style of bread you’re making and the flour you’re using.

The short answer? A very, very long time!

Many people are surprised to learn that sourdough starter doesn’t have an expiry date. With regular feeding and a little care, it can last for years even decades.

In fact, some sourdough starters around the world are over 100 years old and are still being used to bake delicious bread today!

✨ Stored in the fridge, your starter can happily wait between bakes.
✨ Feed it when you’re ready to use it.
✨ Keep it healthy, and it will keep growing for years to come.

That’s one of the things I love most about sourdough starter — it’s alive, resilient, and can become part of your family’s baking tradition for years to come. 🤍

👃 What should sourdough starter smell like?

One of the best ways to tell if your starter is happy and healthy is by using your nose!

A healthy sourdough starter can smell:
✨ Tangy or sour
✨ Fruity
✨ Like yoghurt
✨ Like fresh dough
✨ Even a little like beer

Every starter is unique, and the smell can change from day to day depending on temperature, feeding schedule, and activity levels.

🚨 Signs something may be wrong:
• Pink or orange streaks
• Fuzzy mould
• A strong rotten or unpleasant smell

Most of the time, if your starter smells pleasantly sour and looks bubbly, it’s doing exactly what it should be doing.
