The man behind it all, Shyam Dai, is not just a name but the very soul of this journey. With 52 years in the hospitality industry, starting as a Japanese chef, he poured his passion, discipline, and love for food into building something of his own.
He was the first to introduce Hansko Chhoila in Kathmandu Valley, and what began as a small dream has today become a name loved by generations.
