Have you ever heard that when you cook with alcohol, it evaporates, and there is none left in the food, therefore good for people avoiding alcohol?

Wrong 😁

Yes, when you cook with alcohol, it does evaporate, but... you only lose about 60% of the alcohol, 40% of the original amount is still in there depending on the type of alcohol, method of cooking, and length of cooking. So people avoiding alcohol are still advised to eat such foods in morderation.

For our Christmas rich fruit cakes, by the time it is baked, it has lost about 80% of the original alcohol but during the aging process, it gains a little and while this isn't a lot, we chose another direction for our diabetic-friendly cakes.
