*NATIVE PALM OIL RICE RECIPE* ππππ
_The smoky, spicy, village-style rice_
# # # # *Ingredients* - Serves 4
- *Rice*: 3 cups long grain parboiled rice
- *Palm oil*: 1 cup red palm oil
- *Pepper mix*: 4 tatashe, 2 scotch bonnet, 1 onion, 1 tsp iru/locust beans - blend
- *Protein*: 500g goat meat or dry fish + kpomo + stockfish
- *Veggies*: 1 handful chopped scent leaves/ukazi, 1 onion sliced
- *Seasoning*: 3 stock cubes, 1 tbsp ogiri Igbo, salt, 1 tsp dried pepper
- *Water/Stock*: 4-5 cups meat stock
# # # # *How to Cook - Video friendly steps*
1. *Boil protein*: Season goat meat with onions, stock cubes, salt. Boil till tender. Keep the stock.
2. *Make the red oil base*: Heat palm oil on medium heat 2 mins. Donβt bleach. Add sliced onions + iru + ogiri. Fry 1 min.
3. *Add pepper mix*: Pour in blended pepper. Add dried pepper + stock cubes. Fry till oil floats βΌ10 mins. The smell alone π©
4. *Add stock*: Pour in hot meat stock. Let it boil.
5. *Add rice*: Wash rice, add to the pot. Water should be just above rice. Add dry fish + kpomo.
6. *Cook low & slow*: Cover tightly. Cook 30 mins on low heat. No stirring too much.
7. *Finish*: Add scent leaves in last 5 mins. Let the bottom get a little smoky for that authentic taste.
