This is one of my favourite parts of what I do not just seeing the finished meal, but watching everything come together.

"Everybody is buying dry pepper now." 🌶️

I can't count how many times I've heard that in the past few weeks.

With the price of fresh pepper constantly changing, many homes have started turning to dry pepper. It's easier to store, easier to buy in bulk, and for many families, it's helping to reduce kitchen expenses.

Honestly, I don't blame anyone.

But while preparing a meal recently, I found myself reaching for fresh pepper instead.

Someone around me asked,
"With all this dry pepper available, why are you still using fresh pepper?"

That question made me smile.

The truth is, cooking isn't just about adding pepper. It's about understanding what each ingredient brings to the pot.

Fresh pepper gives food a bright, fresh flavour and aroma. It's one of the reasons some soups taste so lively and vibrant.

Dry pepper, on the other hand, gives a richer heat, stores longer, and is incredibly convenient especially with the way pepper prices have been lately.

So, is one better than the other?

Not really.

The secret isn't choosing sides.

The secret is knowing when fresh pepper will give you the result you want, when dry pepper is the better option, and when combining both gives you the best of both worlds.

Good cooking isn't just about following recipes.

It's about understanding your ingredients.

That's one of the little things we pay attention to at BeeCee's Kitchen, because great meals are built from thoughtful choices, one ingredient at a time.

Everybody is talking about akara, agbado and kulikuli...

Meanwhile, this is me... proudly carrying my own business on my head.

To some, it's just a bucket of doughnuts.
To me, it's early mornings, sleepless nights, lessons, loyal customers, and a dream I'm building one step at a time.

Every business has its own "akara." This just happens to be mine.

Behind every doughnut is someone choosing to keep showing up, even when it's not easy.
And honestly? I wouldn't trade this journey for anything.

I almost let a lot of people down that Sunday.
The funny part? They never even knew.

Every Sunday, I make fresh doghnuts before heading to church. Somewhere along the line, it stopped being just my routine and became part of other people's too.

But that particular Sunday was different.
I woke up late. Later than I should have.
And I already had a customer's order waiting on me. I had accepted it, so backing out was never an option.

While I worked through the order, the thought kept nagging at me.
"Maybe just skip the doghnuts today. You're already behind."

But something in me wouldn't agree to that.
So I made them anyway.
When I got to church, someone caught my eye and smiled.
"I've been waiting for you."

I later found out that several people had already planned their morning around stopping for one of my donuts after service. Some had skipped breakfast entirely.
That hit differently.

What feels like a normal Sunday to me had become something people counted on.
That moment changed how I think about what we do at BeeCee's Kitchen.

People do not just come back because the food is good. They come back because you showed up last time. And the time before that. And the time before that.

Trust is not built in one big moment. It is built one order, one Sunday, one doghnut at a time.

If you know me personally, you'll know that plain rice and I are not exactly best friends.

Most times, if I'm eating rice, it has to be transformed into something special like fried rice, jollof rice, rice and beans, or any delicious variety that brings out the flavor and excitement.

That's one of the reasons I enjoy cooking so much. There's something satisfying about watching simple ingredients come together and turn into a meal that not only looks beautiful but tastes amazing too.

Today's fried rice is a reminder that sometimes, all it takes is a little creativity to turn the ordinary into something extraordinary.

I'll never forget something that happened while I was in school.

One evening, a hostel mate of mine bought barbecue fish on her way back.

Nothing seemed unusual.

The fish looked good.
It smelled good.
And she enjoyed it.

But later that night, things changed.

She developed a serious stomach upset and had to be rushed to the health centre.

Seeing that happen taught me an important lesson: when it comes to food, appearance isn't everything.

A meal can look delicious and still be unsafe if proper hygiene isn't maintained during preparation, handling, or storage.

That's why food hygiene is something I take seriously.

Because good food shouldn't only taste good, it should be safe to eat too.
