That’s traditional bread baking in a clay/earth oven, looks like Moroccan khobz being cooked the old-school way. The dough is placed on a flat surface inside a wood-fired oven, and you can see the flames and embers heating the stone from the side. That intense heat is what gives the bread that amazing crust and smoky flavor.
