【Why are our fried dishes so light and crispy?】
The answer is surprisingly simple: rice.
At Kichi, we use rice flour and rice breadcrumbs instead of conventional wheat flour and breadcrumbs for our Tonkatsu, Ebi Fry, Croquettes and other fried dishes.
Rice flour tends to absorb less oil during frying, helping create a coating that’s lighter, crispier and less greasy.
We originally made the change for gluten-free cooking.
Then we discovered something:
We actually preferred the result.
Better crunch. Lighter texture. And seriously delicious.
And yes — it happens to be gluten-free.
