I made Ai Manas with papaya flower, Carolina reaper chillies, and Dai Dai, with a pinch of Yakushima sea salt. This can only be described as a flavor bomb. Everything is from my garden except for the salt which comes from my neighbor and carpenter, , who uses scrap wood to boil vats of sea water to process the salt out.

Spent the typhoon chopping up chillies to ferment. To the right, habaneros; in the middle, Carolina reapers; to the left, prik kee noo- which translates into mouse s**t chilies. These are from about 300 peppers total, not counting the prik kee noo. I’m still filling the jars.

Yesterday Typhoon Shanshan battered Yakushima. There’s no power in my area, and I drove 10 miles to get a phone signal. My home is intact, and I’ve got candles, batteries, gas, water and food. I’m lucky.
