Introduction
Gujarati is mostly vegetarian, reflecting the strong influence of Jains and the Vaishnavas in the region. Wheat and the two kinds of millet (jowar, bajri) are the main staples. Flour is made into unleavened bread called roti . This is eaten with a variety of vegetable dishes.
