Christmas Cake
Sharing my recipe of Christmas cake on request by friends and family. It's an easy step by step recipe.
Ingredients:
Maida 150 gms
Whole wheat flour 150 gms
Butter 300 gms
Brown sugar 300 gms
Eggs 6
Baking powder 3 tsp
Vanilla essence 2 tsp
Cocoa powder 2 tbsp
Milk 6 tbsp mixed with 1 tsp lemon juice
Mixed dried/candied fruits 200 gms
(cranberries,black currants, golden raisins,dates,candied orange peel,candied cherries).
Mixed powdered spices 1 tsp
(cinnamon, nutmeg,cloves)
Almonds and cashews 100 gms
Rum 200 ml
Method for soaking fruits in rum:
Firstly,chop the cherries,peel and dates.
Place all fruits in a dry glass jar and pour 180 ml of the rum over the fruits.
Close the lid tightly and let it soak for 15 days. Shake the jar once everyday to allow even soaking.
Method for the cake:
Grease and line a cake tin
Sieve the flour with the baking powder and cocoa.
Beat the sugar and softened butter till light and fluffy.
Add eggs one by one,beating them and with each egg add 1 tbsp flour so that the mixture does not curdle.
Add half of the flour and beat well.
Add the milk and mix well.
Add the remaining flour and mix well.
Add vanilla essence and powdered spices and mix well.
Now with a spatula mix all soaked fruits with the cake mixture.
Pour the mixture in the greased cake tin, making a slight hollow in the centre.
Sprinkle the almonds and cashews over the mixture.
Bake in a pre-heated oven at 150 deg C for 1 hr.
After 1 hr check with a tester needle . If it comes out clean the cake is ready. Else bake it for 5-10 minutes more.
Remove from oven. Run a knife along sides of the pan to loosen the cake.
Turn it over on to a plate.
While the cake is still warm, brush it with some rum.
Our Christmas Cake is ready.
