Here’s the recipe for a Zero Oil/Zero Ghee Winter Thali:
1. Methi and Whole Wheat Baflas
Ingredients:
1 cup chopped Methi (Fenugreek) leaves
1 cup Whole Wheat Flour (Mota Atta)
Buttermilk (Chaas) as required
Spices: ½ tsp turmeric powder, ½ tsp red chili powder, ½ tsp fennel seeds (Saunf), Salt to taste
¼ tsp baking soda (Meetha Soda)
Instructions:
In a mixing bowl, combine the chopped methi, whole wheat flour, spices, and baking soda.
Gradually add buttermilk and knead it into a soft dough.
Make small balls from the dough and place them in an idli steamer.
Steam the baflas for about 30 minutes on high flame.
Serve hot with the dal.
2. Dal Recipe
Ingredients:
¼ cup yellow moong dal
¼ cup black urad dal
1 small onion, finely chopped
1 medium tomato, pureed
5-6 garlic cloves, grated
1 green chili, chopped
Spices: ½ tsp turmeric powder, ½ tsp red chili powder, ½ tsp garam masala, 1 pinch asafoetida (Hing), 1 bay leaf (Tej Patta), salt to taste
Instructions:
Wash and soak both dals for 1 hour.
Add a pinch of turmeric and salt to the soaked dal and cook it in a pressure cooker until soft.
In a separate pan, dry roast the grated garlic and chopped onion on low flame.
Once the onions start to dry, add the tomato puree and chopped green chili.
Stir in the remaining spices and add a little water. Let it cook for 10 minutes.
Mix the cooked dal into this masala mixture and simmer for a few minutes.
Garnish with chopped coriander leaves.
Serve hot with baflas.
3. Til Kutta (Sesame and Jaggery Mix)
Ingredients:
¼ cup white sesame seeds (Til)
¼ cup jaggery
Instructions:
Grind both sesame seeds and jaggery together in a mixer.
Serve as a sweet accompaniment to your thali.
4. Meetha Neembu and Salad
For Meetha Neembu, use sweetened lime pickle.
Prepare a fresh salad of your choice (cucumber, carrot, radish, and lemon).
This wholesome and nourishing winter thali is packed with the goodness of methi, sesame, and dals while being completely oil and ghee-free. Enjoy!
