Here's your recipe for Methi Matar Malai (Without Malai) in1tsp oil – Light and Delicious:

Serves 3

Ingredients:

1 small bunch of methi (fenugreek leaves), cleaned and finely chopped

1 cup matar (green peas), boiled

½ cup cashews

1 tsp poppy seeds (khus khus)

½ cup milk

1/2 cup water (or as needed)

½ tsp black pepper

½ tsp sugar (shakkar)

Salt to taste

½ tsp garam masala

1 tsp oil

2 small onions, finely chopped

Instructions:

Prep Work:

Soak cashews and poppy seeds in hot water for 30 minutes. Once soaked, strain and grind them with milk to make a smooth paste. Set aside.

Boil the peas and lightly mash them with a spoon.

Clean and finely chop the methi leaves.

Cooking:

Heat 1 tsp oil in a kadai on medium flame. Add the finely chopped onions and sauté until they turn pink and soft.

Add the boiled peas and chopped methi to the onions. Sauté for about 5 minutes on medium flame, allowing the methi to cook.

Making the Gravy:

Stir in the cashew-poppy seed paste, along with the black pepper, garam masala, sugar, and salt. Mix everything well.

Add water as required to achieve your desired gravy consistency.

Lower the flame and let the curry simmer for about 10 minutes, allowing all the flavors to blend together.

Serve:

Your light and flavorful Methi Matar Malai (Without Malai) is ready to be served! Enjoy with roti, naan, or rice.

Notes:

If you prefer a richer flavor, you can replace some water with more milk.

Adjust the spice levels to your liking.

Lauki ke Muthiya Recipe (Healthy and Delicious)
If you're looking for a quick, healthy, and delicious snack, this Lauki ke Muthiya recipe is perfect for you. Made with wholesome ingredients and steamed for a light texture, it's a great way to sneak in some veggies while enjoying a savory treat! Plus, the best part—it's made with just 1 tsp of oil for a light and guilt-free tadka.

Ingredients (Serves 2)

For the Muthiya:

1 small lauki (bottle gourd), grated

1 cup whole wheat flour

1/3 cup besan (gram flour)

1 tsp red chilli powder

1/4 tsp haldi (turmeric)

Salt to taste

1 tbsp kasuri methi (dried fenugreek leaves)

1/2 tsp meetha soda (baking soda)

Curd (as required to make dough)

For the Tadka:

1 tsp oil

1 tsp mustard seeds

1 tsp green chillies, chopped

Curry leaves

2 tsp water

Fresh green coriander leaves, for garnish

Method:

Prepare the Muthiya:

Grate the lauki and do not squeeze out any excess water.

In a large mixing bowl, combine the grated lauki, whole wheat flour, besan, red chilli powder, haldi, salt, kasuri methi, and meetha soda.

Gradually add curd to form a very soft dough. You want it soft but not too sticky.

Shape the dough into 2 big cylindrical rolls.

Steam the rolls on high heat for 30 minutes. After steaming, switch off the heat and open the lid.

Let the rolls cool down for about 10 minutes before slicing them into bite-sized pieces.

Make the Tadka:

In a small kadai (pan), heat 1 tsp oil.

Once the oil is hot, add mustard seeds and let them crackle.

Add chopped green chillies and curry leaves, followed by 2 tsp water.

Let it simmer for a minute, then switch off the heat.

Pour the tadka over the cut muthiyas.

Garnish and Serve:

Garnish with freshly chopped coriander leaves and serve hot. Enjoy this healthy snack with a side of chutney or yogurt!

Here’s the recipe for a Zero Oil/Zero Ghee Winter Thali:

1. Methi and Whole Wheat Baflas

Ingredients:

1 cup chopped Methi (Fenugreek) leaves

1 cup Whole Wheat Flour (Mota Atta)

Buttermilk (Chaas) as required

Spices: ½ tsp turmeric powder, ½ tsp red chili powder, ½ tsp fennel seeds (Saunf), Salt to taste

¼ tsp baking soda (Meetha Soda)

Instructions:

In a mixing bowl, combine the chopped methi, whole wheat flour, spices, and baking soda.

Gradually add buttermilk and knead it into a soft dough.

Make small balls from the dough and place them in an idli steamer.

Steam the baflas for about 30 minutes on high flame.

Serve hot with the dal.

2. Dal Recipe

Ingredients:

¼ cup yellow moong dal

¼ cup black urad dal

1 small onion, finely chopped

1 medium tomato, pureed

5-6 garlic cloves, grated

1 green chili, chopped

Spices: ½ tsp turmeric powder, ½ tsp red chili powder, ½ tsp garam masala, 1 pinch asafoetida (Hing), 1 bay leaf (Tej Patta), salt to taste

Instructions:

Wash and soak both dals for 1 hour.

Add a pinch of turmeric and salt to the soaked dal and cook it in a pressure cooker until soft.

In a separate pan, dry roast the grated garlic and chopped onion on low flame.

Once the onions start to dry, add the tomato puree and chopped green chili.

Stir in the remaining spices and add a little water. Let it cook for 10 minutes.

Mix the cooked dal into this masala mixture and simmer for a few minutes.

Garnish with chopped coriander leaves.

Serve hot with baflas.

3. Til Kutta (Sesame and Jaggery Mix)

Ingredients:

¼ cup white sesame seeds (Til)

¼ cup jaggery

Instructions:

Grind both sesame seeds and jaggery together in a mixer.

Serve as a sweet accompaniment to your thali.

4. Meetha Neembu and Salad

For Meetha Neembu, use sweetened lime pickle.

Prepare a fresh salad of your choice (cucumber, carrot, radish, and lemon).
