Practice Tuckshop house-brewed Tea infused with Kafir Lime. This special blend of Lapsang Souchong and Tie Guan Yin tea leaves that is curated for Practice Tuckshop brewed perfectly by master Kenny was infused with dehydrated Kafir lime leaves.

Appetiser: Smash food, create your art!
Crispy Poori Salad. All diners were encouraged to play with their food by smashing the crispy poori that adorned this salad and toss Potatoes, chickpeas, fresh vegetables with a Yuzu Sour Cream, Saunt and Green Chutney!

Mains: Don’t waste, save your world!
Idli, Chutney and rescued Vegetable Sambar. Gooseberries, Ladyfingers, Carrots, Eggplants were rescued into a thick Sambar served with warm, soft Idlis, Beetroot, Mango Chutneys and Soy based Protein, Saivai from the house of .

Dessert: Dream big, follow your rainbow!
Cereal Cupcakes made with Froot Loops topped with whipped cream as ordered by a 4 year old cutie pie whose favourite colour is “rainbow”. Topped with a Pavlova style, chewy, meringue piped into blue clouds. Served along with a nostalgic Horlicks Ice Cream that was made from scratch.

I would like to thank each and every member of the Practice Tuckshop for being such an amazing team. I could not have asked for anything more!! My heartfelt thanks for being the perfect hosts, being so meticulous and most importantly ensuring that all the diners had fun!

A traditional Indian fruit cake originating and lending its name from the north Indian city of Allahabad.

This unapologetically Indian cake is made with ‘petha’ or candied ash gourd, orange marmalade or amla murabba, laced with spices and baked with clarified butter or ghee.

A food storytelling of “Christmas in India”, plated this lovely petha cake, dusted with a cinnamon, mace, ginger, clove, black pepper crumble piped with an orange marmalade whipped cream and topped with a Christmas tree meringue cookie. Thrilled to share that Vitality Foods won the Big Idea Food Competition (BIFC) across Asia!

Pioneered by Big Idea Ventures, this competition was about celebrating the rich and diverse culinary heritage of Asia. A novel platform that recognises food innovation in the plant and/or fermentation-based food market segments across China, Indonesia, South Korea, Japan, Thailand and Singapore.

This is just a beginning of an exciting culinary start-up journey at Vitality Foods. The plan is to explore a world of food possibilities while experimenting with new ingredients, formulations to create delicious, convenient and better for you products.

I am grateful to Big Idea Ventures for the opportunity to share the passion for food with the world and supporting us contribute to sustainability, biodiversity and food security.

Very thankful to the incredible panel of judges who patiently listened to our pitches and offered their palate perspectives based on the taste of our products.

Roquette | Customer Experience Center, Singapore

Roquette, a leader in plant based ingredients, launched their Customer Experience Center in Singapore on 20 July 2023. The Customer Experience Center consists of a culinary studio and a sensory hub to support the development of food science and culinary innovation catering to all their  customers across Asia. 

I have known the team at Roquette for a while now, this being my third event with them. This was an extremely well organized event, journeying their customers across functions to showcase their capabilities. We worked together to incorporate ingredients from Roquette and presented a 4-course menu to demonstrate their endless possibilities expressed in Asian cuisine. 

It is inspirational to see a company show their appreciation to preserve the culture and food in the region. The team of food scientists in a true kampong spirit, assisted me in showcasing very traditional, hand-made dishes as part of the degustation menu. 🙏

Their culinary studio with its interiors designed on Peranakan Culture, it deserved a menu to complement the experience. We served tasting portions of the following:
* Otak-Otak served in Kueh Pie Tee
* Chilli Crab served with Mantou
* Pandan, Purple Sweet Potato and Pumpkin Ondeh-Ondeh 
* Fiber enriched Lime infused Green Tea

After completing my graduate studies, I went on to do my masters in entrepreneurship and management. Worked 12 plus years in the corporate bandwagon from being an analyst to marketer.

I was working with IBM, Singapore and my colleagues (now friends :)) saw the Masterchef auditions Ad and sent me the application link on WhatsApp. I was reluctant, but they encouraged me to give it a shot. I listened to them and have never once regretted that decision.

At the Masterchef Kitchen I had an amazing experience and met some extraordinary people. I will cherish it for the rest of my life. This changed the trajectory of my career by 360 degrees.

My first venture, Kechil Kitchen, a Singapore enterprise that marries my storytelling skill sets with the passion to cook and feed people. Through this venture I work with restaurants in Singapore, food companies and partner with organisations, media, lifestyle education houses etc. to journey the diner through a food experience.

My second venture, co-founded, Vitality Foods, a Singapore-based foodtech, curating food solutions focused on the silver generation market. There is a burgeoning trend where the developed nations are ageing very rapidly, including countries in the Asia region. Vitality Foods was formed because of the unmet, underserved need to infuse taste and nutrition into the diets of the ageing population in Asia Pacific.

Throughout my career path, it is my role as a Chef that has been the most gratifying. Today, I am able to champion sustainability, diversity, local produce and food security in Singapore, it is only because of Masterchef.

This is my journey, story.

For me wearing the chef’s whites is about championing sustainability, biodiversity and food security in Singapore. And, in this journey, I continue to meet some amazing companies and people.

One such team of people work at Roquette. A global leader in speciality food ingredients, their pea protein and soluble fiber is hands down the best! The team reached out to me to create an Asian plant based menu with their ingredients.

Having worked with their ingredients even before this project, I was confident of showcasing Asian Gastronomy. The menu had to reflect Asian culture, heritage, traditions and sense of a community that loves to eat.

To showcase the possibilities of food that reflects diverse palate of Singapore, a 3 course plant based menu was developed:
Starter Course: Chilli Crab with Mantao
Main Course: Char Siu with High Protein Noodles
Dessert Course: Kueh Salat

The above menu showcased the use of Roquette’s Nutralys Plant Protein, Nutrious Soluble Fiber and Sweetpearl Maltitol as core ingredients.
