It was in 1996 when we set together with a group of friends talking about work and life in general. The question then come up where to eat delicious Balinese in a safe and comfortable environment. Swiss friends then suggested that myself and my wife Puji should seriously consider to open a Balinese restaurant. At that time I already wrote my first book on Bali’s incredible delicious cuisine and with it the foundation was given.

Never in our remotest dreams we imagined that this little Balinese Restaurant would quickly become blessed with so many countless incredible magical moments. It was always our commitment to do whatever possible to maintain the highest imaginable food and beverage standards to reflect and showcase the amazing delicious variety of Bali’s food flavours our beloved Island has to offers. For the more active culinary traveller we started our cooking classes with market visit; this to introduce the secrets of blending spices and the many flavours for which the island is known for.

The evening before Silent Day, when the island still breathes in sound and fire, the village begins to gather.

From every corner of the village, people emerge. Children with wide eyes. Elders with calm, knowing smiles. Young men carrying the towering ogoh-ogoh—creatures born from imagination, fear, and ancient stories. Their faces are fierce, their bodies twisted, exaggerated… a reflection of everything dark that lives within the world—and within ourselves.

Flames dance in the wind, casting shadows that make the ogoh-ogoh seem as if they are moving on their own. The gamelan grows louder, faster, almost hypnotic. You can feel it in your chest, like a heartbeat shared by everyone present.

The ogoh-ogoh are lifted high. The carriers shout in unison, their voices filled with energy and pride. They move through the streets, turning sharply at crossroads, spinning the figures to confuse the spirits—so that no darkness can find its way back home.

Here, the journey of each spice continues. Within hours of arriving from local markets, the spices are carefully cleaned, sliced, and gently dried at a controlled 50°C. This low-temperature method preserves essential oils, color, and nutrients while naturally intensifying flavor. Approximately 1.2 kilograms of fresh turmeric produce just 100 grams of dried turmeric—an extraordinary concentration of aroma and taste.
