Warm Potato Salad

Υλικά

1/2 κιλό baby πατάτες
3 χρωματιστές πιπεριές
2 φρέσκα κρεμμυδάκια
1 ξερό κρεμμύδι
1/2 ματσάκι μαϊντανό
1 κονσέρβα τόνο σε λάδι
1 λεμόνι

Για τις πατάτες:
Πάπρικα
Μουστάρδα
Ρίγανη
Ελαιόλαδο

Homemade Tacos

Για τις τορτίγιες

230 γρ. αλεύρι για όλες τις χρήσεις
1 κ.σ. αλάτι
50 ml νερό
50 γρ. βούτυρο, σε θερμοκρασία δωματίου

Για τα tacos

2 στήθη κοτόπουλο
1 κ.σ. πάπρικα
1 κ.σ. σκόρδο σε σκόνη
1 κίτρινη πιπεριά
1 κόκκινη πιπεριά
1 λευκό κρεμμύδι
50 γρ. καλαμπόκι
Ψιλοκομμένος κόλιανδρος
Τριμμένη μοτσαρέλα
Αλάτι & πιπέρι
Ελαιόλαδο

Εκτέλεση:
Ετοιμάζουμε τη ζύμη για τις τορτίγιες και την αφήνουμε να ξεκουραστεί. Ανοίγουμε σε λεπτά φύλλα και ψήνουμε σε ζεστό τηγάνι.

Κόβουμε το κοτόπουλο και τα λαχανικά, προσθέτουμε πάπρικα, σκόρδο, αλάτι, πιπέρι και ελαιόλαδο και τα μαγειρεύουμε μέχρι να πάρουν ωραίο χρώμα. Προσθέτουμε το καλαμπόκι και τον κόλιανδρο.

Γεμίζουμε τις ζεστές τορτίγιες με το μείγμα, προσθέτουμε τη μοτσαρέλα και σερβίρουμε.
