Ingredients:
2 lbs salted pigtails (cut into pieces)
3 tbsp honey
2 tbsp brown sugar
1 tbsp soy sauce
1 tbsp ketchup
2 cloves garlic (minced)
1 tsp ginger (grated)
1 tbsp lime juice
1 tsp paprika
1 tsp black pepper
1 tsp Grenadian hot pepper sauce (optional for spice)
2 tbsp vegetable oil
2 cups water
1 tbsp butter
Instructions:
Prepare the Pigtails
Rinse the salted pigtails thoroughly to remove excess salt. Bring a large pot of water to a boil, add the pigtails, and boil for about 20-30 minutes to reduce the salt. Drain and set aside.
Sear the Pigtails
Heat vegetable oil in a large pan over medium heat. Add the pigtails and sear until theyโre lightly browned on all sides, about 5-7 minutes. Remove and set aside.
Make the Honey Glaze
In a separate small saucepan, melt the butter over medium heat. Add the garlic and ginger, sautรฉing until fragrant. Stir in the honey, brown sugar, soy sauce, ketchup, lime juice, paprika, and hot pepper sauce. Let it simmer for 3-5 minutes, stirring constantly, until the sauce thickens.
Combine the Pigtails with the Glaze
Add the browned pigtails back into the pan with the honey glaze. Toss the pigtails in the sauce, ensuring theyโre fully coated. Add water to the pan, cover, and simmer for 30-40 minutes until the pigtails are tender and the glaze is sticky.
Finish & Serve
Once the pigtails are tender and glazed to perfection, remove from heat. Serve hot, garnished with fresh herbs, or alongside your favorite sides, like rice, salad, or fried plantains. ๐ฝโจ
