Paul Green returned to Three Chimneys almost twenty years after starting here as a young commis chef. Now he leads the kitchen at both Three Chimneys and Three Chimneys at Talisker.

Born in Edinburgh, raised in the Scottish Borders and trained under some of the most acclaimed chefs in the UK including Simon Rogan, Martin Wishart and Adam Reid.

A few rare openings have just come up at The House Over-By.

August 9th, 11th, 16th, 30th and 31st. September 2nd and 14th. Skye in late summer and early autumn is something worth planning around. The light changes, the crowds thin out and the island feels like it belongs to you again.
