Ingredients:
2 cups cooked rice, preferably leftover and chilled
2 tablespoons oil
1 onion, chopped
3 garlic cloves, minced
1 teaspoon grated ginger
1/2 teaspoon turmeric powder
1 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 eggs, beaten
1/2 cup frozen peas
1/2 cup chopped carrots
1/2 cup chopped bell peppers
2 tablespoons soy sauce
1/4 cup chopped green onions
Instructions:
Heat the oil in a large skillet or wok over high heat.
Add the chopped onion, garlic, and ginger to the pan and stir-fry for 1-2 minutes until fragrant.
Add the turmeric, curry powder, salt, and black pepper to the pan and stir-fry for another 1–2 minutes.
Push the onion mixture to the sides of the pan to make a well in the centre.
Add the beaten eggs to the well and scramble them until cooked through.
Mix the onion mixture and eggs together, then add the frozen peas, chopped carrots, and bell peppers to the pan.
Stir-fry the vegetables for 3-4 minutes until they are tender but still crispy.
Add the chilled cooked rice to the pan and stir-fry for 2-3 minutes until the rice is heated through and lightly browned.
Add the soy sauce to the pan and stir-fry for another minute until the rice is evenly coated.
Serve the fried rice hot, garnished with chopped green onions.
