**Khao Soi (Khao Soy)** is a famous Northern Thai curry noodle soup most closely associated with the city of Chiang Mai.

The dish is believed to have been introduced to Northern Thailand by Chinese Muslim traders from the Yunnan region of China who travelled ancient trade routes through Myanmar, Laos and Thailand. Over time, local Thai ingredients were incorporated, creating the rich coconut curry broth that is now synonymous with Khao Soi.

Traditionally served with chicken or beef, Khao Soi combines soft egg noodles in a fragrant coconut curry soup, topped with crispy fried noodles and served with pickled mustard greens, shallots, lime and chilli oil. The combination of creamy, spicy, tangy and crunchy elements has made it one of Thailand's most celebrated regional dishes.

Today, Khao Soi is regarded as one of Northern Thailand's signature comfort foods and a must-try dish for visitors to Chiang Mai and the surrounding region.
