End the debate of green, red or dried Chilli by using all three.

Make a purรฉe of a pod of garlic, yes a whole pod, with 2-3 green chilli and sautรฉ in 6 tbsp of olive oil. Add smashed piccolo tomatoes and prawns the best frozen tiger and king prawns with whole red chilli and boil the linguine while prawns are cooked for 2-3 mins.
Sprinkle 2 tbs of dried chilli to the prawns and toss in the drained linguine. Olive oil garlic and chilli with prawns is just a delicious combination!!

A slow cooker malai chicken cubes grilled to perfection slowly with regular basting and turning around served with roasted garlic and olive oil seasoned red cabbage and rocket leaves and the depth of aubergine with scallions is absolutely mouth watering.

The trick is to marinate the chicken overnight and enjoy the process of slow grilling while making your burnt aubergine.

Itโ€™s lush and delicious.

Itโ€™s smooth melt in your mouth texture with the richness of the udad dal and the kidney beans matched in perfection with spices is a true winner.

And my older one loves it with paratha and the younger one with jeera rice.

If you want bun free burger then this is your go to layered patty.
Chicken mince with onion,garlic ginger paste and chillies and coated with egg and coated with flaxseed powder and pan grilled makes the quickest patty. Layer them with oyster mushrooms grilled with onions to give the sweet caramelised taste and added bite to the whole ensemble.

*Chargrilled veggies and mirrin Salmon with garlic sesame noodles*

This 5 min recipe is just too good to let it pass by.
All you need is a salmon fillet marinated in tablespoon of Mirrin, Chinese five spice and garlic and pan griddled on high heat and toss frozen veggies to add further charring and sizzle while the rice noodles pre soak in boiling water.
Stir fry the noodles with chunks of garlic in sesame oil and add dried chillies and soy sauce for added oomph.
Combine veggies with the noodles and serve with salmon.

On the days when you just donโ€™t know what to make and have store and freezer staples this is one awesome wholesome meal.

You revived not only my taste buds but also my soul with food and flavours that echoed loudly of my Indian roots!
And what a great service when I asked for โ€œchilli garlic naan (India style- more chillies than the actual naan).
the spectacular Lake view hotel and the amalgamation of cuisines is beyond compare.

Yes I know. I know๐Ÿคฆโ€โ™€๏ธ I have been missing in action. Multiple jobs has had my fair share of attention. But here I am giving you something that gets its inspiration from the streets of Mumbai.
The roots ofBombay sandwich made its way to a high protein food with masala grilled tofu with green chutney, cucumber raita , slices of tomato, onion and avocado with red cabbage red onion slaw making it a high protein meal.
Impressed?? Go try it.

Cut a block of tofu into 4 thick slices. I used firm tofu.
Dip the sides in a spice mix of paprika, cayenne, salt and pepper. Grill / air fry or griddle them for 15-20 mins till crispy on sides. Sprinkle salt n both sides to ensure the flavours of paprika and cayenne come through post grill.

Keep slices of tomato onion and avocado ready along with cabbage slaw and raita. I used for both to to make it high protein. I also added green chillies in the raita abs slaw to give added kick.

Start layering with green chutney slaw raita and slices precut and sprinkle salt pepper and chat masala and repeat.
And voila!!
Spicy grilled masala tofu sandwich is ready.

Itโ€™s just so easy. Cut the chicken breast into thin butterfly slices and marinate with saffron milk, 1 tbsp yogurt and lots of lemon juice and 2 tbsp olive oil and salt to taste.
Place this in a grill with a pepper top off and filled with precooked quinoala ( cooked quinoa oven roasted with cranberries, mixed seeds and nuts and dried ) and cherry tomatos.
Add the chicken drip oil to the tahini to give extra oomph.
Itโ€™s delicious and nutritious!

TO BE OR NOT TO BE?? With summer rolls and spicy peanut sauce.

The spring sun seems to playing peek a boo with us, amidst thunderstorms the sun that comes through giving a glimpse of what we should be having. Glorious sun and open skies inviting for perfect summer rolls.
Served with spicy peanut sauce and sweet chilli sauce these rolls are extremely easy.

You would need
Rice paper-Amazon delivered ๐Ÿ˜‰
Julienne peppers, carrots, spring onions
Peanut sauce : made with 2 tbsp curry powder, 1/2 cup coconut milk, peanut butter 3tbsp, salt to taste and 1 tbsp chilli powder, 1 tbsp sesame oil and squeeze of half lemon!!

Drench the rice paper with warm water, lay on clean surface, place the fillings ( can try anything ; the world is is your oyster) coat with sauce and voila itโ€™s perfect.
Now to just enjoy them before the sun skips the show.
