I’ve had to say no to teenagers looking for their first job.
Not because they weren’t good enough. Because between record-high National Minimum Wage, holiday pay, sick pay, pension contributions and National Insurance, the cost of taking someone on has gone up faster than most people realise.

I walked past this bench on my morning walk today.
7 years ago, I sat on this very bench with a notebook and started planning a business I wasn’t sure I could actually build.
I didn’t know how much rent would cost. I didn’t know what a P&L was. I didn’t know I’d end up with a high street shop and a franchised store in another city, a team, and a plan to pivot the entire model into wholesale.
I just knew I wanted to try.

A customer said something to me the other day that stuck šŸ‘€

Food and movement are both joys. Neither one is a reward or a punishment for the other. No guilt, no transaction, just balance.
That’s not a marketing line. It’s what I actually believe after 20 years of trying every extreme and coming back to the middle.

Every Tuesday - we close the shop and go all-in on wholesale — baking volume batches for gyms and cafes instead of relying on footfall and expensive mid-week deliveries. Not giving up, but working smarter rather than grinding out the fake hustle. Building something that survives this squeeze — and gets back to growing the team once our new channel is up and running!

We have an exciting new partnership to announce in the coming weeks to accelerate this, a new product range, operating later on our busier days; Fridays and Saturdays!

Why: The government-mandated costs have added an extra Ā£2,500 a month to operate this business....That’s the next hire we don’t get to make!

When are you your most authentic self?
Not performing. Not wearing a mask. Just you.
I’ll be honest — I’m not a social media person. I used to hate content days. They felt like an act. A performance for other people’s approval.
But something changed a few weeks ago.
I posted my first honest video. Within days, a business owner friend messaged me. His polished content wasn’t landing and he didn’t know how to start being real on camera.

Every dessert shop on your high street is getting squeezed from both sides right now.
Our costs keep going up. But our customers have less to spend. And somewhere in the middle is a business trying to stay open for the people it was built for.
Before I sell a single brownie on a midweek day — over Ā£620 goes out the door. Premises, staff, admin. And you’d be amazed what’s in that number. Did you know we pay a licence just to play music in the shop?
We’re just off the main high street in Lincoln so our costs could be a lot worse. Fair play to anyone who is on the main high street — I genuinely don’t know how you do it.
But here’s the other side. An everyday treat is becoming a luxury for a lot of people right now. I see it in the quieter midweek days and the smaller orders. People are making choices they never had to make before.
I can’t cut my costs enough to make it easy. I can’t raise my prices without losing the people I’m here for.
That’s the impossible position.

If our till doesn’t hit Ā£800-Ā£1,000 a day, Sinple Treats is losing money. Not breaking even. Losing money. Once you factor in fixed utility rates, rising staff wages, premium ingredients and rent — turning the lights on during a quiet day is just expensive movement. Busy is not a badge of honour. Profitability is. For too long, pride kept those doors open. Grind it out, I thought. But a broken model doesn’t care about your work ethic. So we’ve made a decision. Tuesdays we’re closing the shop.
