Building in public ā€” Part 3.
Small update but a real one.
Since I last talked about the coffee corner concept, Iā€™ve marked out where every piece of equipment is going to sit. Coffee machine position. Oven position. Grab-and-go counter footprint. All physically taped out on the floor so I can actually walk through it and see if it works.
Contractors have been in over the last few weeks to give quotes on the fit-out work. Which is the moment concept starts becoming budget ā€” and budget starts becoming real.
Nothing to announce yet. No dates, no reveal. Just quiet progress behind the scenes.
But this is the part that matters. The gap between talking about a plan and actually starting to do it is where most ideas quietly die. So Iā€™m making sure this one doesnā€™t.

New on the menu.
Rolo Salted Caramel Blondie.
Buttery blondie base, whole Rolos folded through, salted caramel drizzle on top. Baked fresh in-house like everything else we do.
This one started in the wholesale kitchen ā€” tested with our trade customers first. It passed. And now itā€™s landed on our own menu in Lincoln.
Genuinely one of my favourites weā€™ve made in a while. The caramel goes properly gooey when itā€™s warm.

A week ago I said I was moving 11,000 branded boxes up several flights of stairs to our storage unit. Then I tracked the calories on my fitness watch.

Hereā€™s the numberā€¦.. 606 calories!

Today I didnā€™t get chance to train ā€” but this ended up being my workout.

Thatā€™s a proper session. Roughly the same as a 5k run at pace. Except I didnā€™t have to pay for a gym membership or lace up trainers ā€” I just showed up to do the boring back-of-house job that keeps the shop running.

This is one of the weirdly good things about running a small business and I love the challenge!

Seven years in and Iā€™m still surprised how physical this job actually is. Nobody warns you about that in the business books.

Would rather be doing this than sat at a desk any day.

Building in public ā€” Part 2.
When I moved the shop into Lincoln city centre, I made one specific mistake thatā€™s biting me right now.
I didnā€™t leave enough space for an ice machine.
Iced coffee is having a genuine moment right now. Itā€™s not a trend ā€” itā€™s a shift. And Iā€™m sitting here with a dessert shop layout designed for a different customer at a different time.
So this is the concept Iā€™m working on. Move the coffee machine and the oven forward toward the window. Free up the space we need for proper coffee kit including that ice machine. And build the coffee shop corner into the front of the shop where customers walking past can actually see it happening.
Imagine walking past our window in Lincoln and seeing coffee being pulled and brownies being sliced fresh. Thatā€™s the vibe. Thatā€™s the future daytime moment I want us to serve.
Itā€™s still concept for now. But this is genuinely where my head is at ā€” mapping out what year 8 actually looks like, one decision at a time.

Today is 7 years since I started this business.
And honestly, the biggest changes are still ahead of us.
Because seven years in, Iā€™ve realised the customer moves and the business has to move with them. Not everyone has time to sit down for a big waffle or a full dessert experience during the day. But almost everyone has time for a coffee and a brownie.
We already bake fresh in-house. Weā€™re already investing in more fridge capacity for wholesale. Weā€™ve got a window on a Lincoln street with foot traffic walking past it every single day.
So over the next few weeks Iā€™m going to map out exactly what I want to change. Coffee shop vibe. Grab-and-go. Better use of our daytime hours. And Iā€™m going to do it publicly ā€” because building in public is the only way I know how to do this now.
Seven years taught me the business you build in year one isnā€™t the business you serve in year seven. Time to figure out what year eight actually looks like.

Some days you just need to walk.

Iā€™ve had to say no to teenagers looking for their first job.
Not because they werenā€™t good enough. Because between record-high National Minimum Wage, holiday pay, sick pay, pension contributions and National Insurance, the cost of taking someone on has gone up faster than most people realise.

I walked past this bench on my morning walk today.
7 years ago, I sat on this very bench with a notebook and started planning a business I wasnā€™t sure I could actually build.
I didnā€™t know how much rent would cost. I didnā€™t know what a P&L was. I didnā€™t know Iā€™d end up with a high street shop and a franchised store in another city, a team, and a plan to pivot the entire model into wholesale.
I just knew I wanted to try.
If youā€™re sitting somewhere right now with an idea you donā€™t fully believe in yet ā€” this is your reminder that the version of you sat there today is closer than you think to the version of you 7 years from now, walking past and quietly proud.

A customer said something to me the other day that stuck šŸ‘€

I laughed at first. Then I thought about it properly.
Truth is, Iā€™ve spent 20 years training, running, and reading probably TOO much about nutrition. Iā€™ve had my health properly checked recently. And what Iā€™ve landed on is going to shape what Sinple Treats does next.
Food and movement are both joys. Neither one is a reward or a punishment for the other. No guilt, no transaction, just balance.
Thatā€™s not a marketing line. Itā€™s what I actually believe after 20 years of trying every extreme and coming back to the middle.
