So close, yet so far…

I took this photograph when I was at site earlier today, and it sums up my state of mind perfectly. It’s a feeling of standing in a bit of a cage with the possibility of colour and growth all around you.

Sadly landlord building works have not progressed for another week…which means an end July opening is now looking impossible too. The sad/funny/strange thing is whoever I’ve spoken to about it is not surprised and has a builder tale of their own to share! I’m very disappointed of course, mainly because I’d never anticipated it taking as long as 7+ months, and also because the patio we planted out won’t be enjoyed for as long as I’d hoped this year. On the bright side, if this doesn’t take me into winter (don’t even say it Parul!), maybe for the time we are able to enjoy it, it’ll be fuller and greener? And delays mean more time to test appliances, fix inevitable glitches, train staff and put those finishing touches on?! Ever the (now frustrated) optimist!

It’s not all coffee on the Drinks menu! We’ve got a lovely selection of teas too.

🌟 Our masala chai is made with a homemade blend of aromatic spices, gently roasted and ground, filled into tea bags with leaves, and then brewed. Yes that’ll be me roasting, grinding and bagging 😃 If you’d like to enjoy your chai the way we do in India, you’ll want milk and sugar in your cuppa! However, it is wonderful black too.
🌟 We’ll also be serving a range of Birchall teas. A multi award winning family business, with sustainability at the heart of their work, has been trading for over 150 years. All their tea bags are biodegradable, their 32,000 square foot tea factory in Wiltshire is powered by 460 solar panels, and they’ve won 97 (that’s right!) accolades at the Great Taste Awards since 2011. We’ll have English Breakfast, Earl Grey, Lemongrass & Ginger, Camomile, Peppermint, Green, and Decaf tea on our menu.

A coffee in the morning and a tea in the afternoon with a sweet treat on the side is bliss if you ask me!

It’s been a busy couple of weeks! Getting a little closer to the end (or the beginning depending on how one sees it 😃) with each one.

✔️ Front of house decorating done, kitchen and toilet to go, thanks , see you again shortly! 🖌️
✔️ Indoor electrics done ⚡️
✔️ Bins delivered, bin storage shed to be built next 🗑️
✔️ Most things in the cleaning department delivered too, and there were a shocking number of boxes!! This was the one area I had not anticipated being AS complex as it has turned out to be…! 🧹
✔️ Crockery all washed and stored (thank you Jola!), glassware and cutlery next 🥣
✔️ Appliance unpacking and testing has commenced
✔️ Coffee machine and grinder installed and working beautifully, thanks ☕️
✔️ Coffee training done, very insightful session, thanks coffee 🫘
✔️ Indoor furniture has started arriving!
✔️ Staff training and practice about to kick off!

Another round of carpentry to happen this week, hopefully our fire risk assessment too. I’ve got a huge basket ready to go on Amazon business, but each time I think about checking out, I remember more stuff, so it’s just going to sit there for a while until I’m 100% sure I have it all covered 😃

Still aiming for an end of month opening…but one big caveat on that is building works for the toilet that are still underway, many delays out of my control unfortunately, and until those are done and signed off, we can’t open. It is proving rather frustrating not having a timeline on it…but I have everything crossed once again that this will be the week 🤞🏼🤞🏼 In the meantime, I crack on with everything I need to do on all other accounts, and there is plenty of that!

Ticked a few things off the list last week, progress felt good!

✔️ Front of house electrics, plumbing and carpentry done hurrah, all we need is a final lick of paint and then the coffee machine, furniture, and cake stands can come in 🎉
✔️ Kitchen plumbing done, stainless steel units almost in, electrics about to commence, and then that final coat of paint and I can start moving tableware and appliances in and filling up the ingredient cupboards!
✔️ Sorting out storage for cleaning supplies and takeaway packaging is the next big task, going to need to get some sheds built I think, so research for that is underway
✔️ Speaking of cleaning, I can also now potentially write a thesis on tests cleaning chemicals need to pass, mop head types, commercial detergents and rinse aids, and surface cleaner options for each part of a food premises, and different types of gloves too! 🤓
✔️ More damaged goods that need to be returned and replacements sourced!! (here we go again)

Good week overall, getting closer to launch, let’s see what this one brings 😃

We’ll be using lots of lovely fresh fruits, vegetables and herbs on our menu. And we didn’t need to look any further than Bookham based Laytons Greengrocers! We think the quality of the produce they source is excellent, and they’re as local as you can get. We’ve been hooked since 2020!

Great Taste Award finalists for the last couple of years, Sweet C’s make decadent handcrafted chocolates using the finest grade chocolate sourced directly from Colombia. They’ve partnered with a certified B Corp supplier who shares their dedication to sustainable production practices, ensuring every step from bean to bar is environmentally conscious, including their packaging! We love their ethos and that they’re Bookham based 😃

Once we’re open, come try one of their delicious chocolates…with an Indian spice twist! A lovely treat for yourself or to gift.

It’s been a week of rain and tools! Lots of progress made, but as often happens, plenty of hiccups. Damaged deliveries, deliveries that didn’t show up, appliances that didn’t actually fit where they were meant to, fittings that weren’t in stock, installations that couldn’t be completed because equipment didn’t work as expected 🤦🏽‍♀️😂 I’m laughing because I’d be crying otherwise and that’s no good! Have spent more time on 0800 and 0333 numbers having pointless conversations with AI bots (sometimes human beings!) in the last 7 days than I probably have in all my life so far. HOWEVER, we have moved forward AND the patio looks lovely, so I’m going to focus on that!

✔️ Planting out done and it all survived the rain and storm! 🪴 🌺
✔️ Front of house electrics allllmost completed
✔️ Carpentry works allllmost completed
✔️ Plumbing works allllmost completed
✔️ Broadband and phone installation allllmost completed
✔️ Peeling off laser wraps from all the stainless steel allllmost completed 🤣
🔜 Once all that’s done, I can then move onto kitchen appliances and electrics, furniture, a final lick of paint, and then stock and inventory, staff training and everything else that brings us closer to launch!

One day at a time is the general theme for the moment 🧘🏽‍♀️

When we moved to Bookham back in November 2019, Covid times were upon us pretty promptly. When restaurants closed, and home deliveries were the new Friday/Saturday night and supporting small businesses were occasions for human connection and a feeling of community, I found myself actively seeking out local ventures to support and to make life interesting. I discovered Bramble Cottage Crafts because Instagram recommended Alison’s account to me and it didn’t take me 2 mins to place an order! I’ve been hooked ever since.

Bramble Cottage Crafts are a small family business based in South Holmwood. Over the years Alison has baked for family birthdays, treat boxes to carry with me to India, hampers to share with visiting friends.

When I decided to build Carom, I asked Alison if she’d be happy to create a bespoke range of sweet treats for us to celebrate Indian spices and flavours. I was delighted when she agreed! We discussed combinations and ideas, Alison did lots of experimenting and tweaking in her kitchen, and I can’t wait to soon share her delicious bakes with you. We’ve got tray bakes, cakes and biscuits. All with that unmissable hit of those gorgeous spices cultivated with care across India.

Great ingredients and lots of love in every bite. Handmade in small batches, using traditional methods and a touch of culinary flair, Alison’s bakes pair wonderfully with our hot beverages.

My favourite thing about 111B Little Bookham Street is the lovely patio and all the morning light that comes streaming through the glass front. It fills my heart! It’s also been my favourite space to design. In my mind’s eye I can see it humming with conversation, laughter, the clink of cutlery, and the smell of coffee. Hanging baskets swaying gently in the summer breeze and lanterns casting shadows in the evenings. Music to fill the pauses, a furry friend or two snoozing under the table.

Today we completed the first step in bringing that vision to life! After many wonderful hours spent strolling down the aisles at , I brought on board to give all those plant babies a home to fill out. Makes me very happy looking at it all now 🥰 Huge thanks!
