Less than a month to go until we open our doors in Hay on Wye for the first time. I’d like to thank everyone who has already booked a table and shown your support so far, it has been incredibly motivating and unexpected.
FIR By Matt Sampson is going to be personal, intimate and deliver world class ingredients on a daily basis and I couldn’t think of a better location than Hay. It’s full of culture, creatives and people who are genuinely passionate about their crafts.

Once a month we will be hosting our “Sunday Session” experience creating a unique way to spend your Sunday afternoon! Everything you’d expect from a Sunday lunch but with a few special additions spread across a 5 course menu.
