Babà al rum. The real Neapolitan thing. 🇮🇹

A yeasted dough, proved and baked, then soaked in rum syrup until it's soft the whole way through. This is not a sponge and it can't be rushed — the soak is what makes it.

There's a non-alcoholic version too, soaked in vanilla and citrus syrup instead, so children and anyone avoiding alcohol get the same thing.

Red velvet, made the proper way. ❤️

A little bit of Brazil in Oxfordshire. 🇧🇷

Bolo de Brigadeiro — soft chocolate sponge layered with brigadeiro, the thick, fudgy Brazilian chocolate cream made from condensed milk, cocoa and butter, cooked slowly until it pulls away from the pan. Rich, glossy and completely different from an English chocolate cake.

Brigadeiro is the sweet every Brazilian grows up with at birthday parties, and it works beautifully as a celebration cake. A bit of my kitchen looking beyond Italy for once.

Tiramisù - and a version the children can have too. ☕️

The classic, made properly: mascarpone cream, savoiardi soaked in real espresso, and a dusting of cocoa. And because nobody likes being left out at the table, I also make it caffeine-free for children - the same mascarpone cream, with the biscuits soaked in milk and cocoa instead of coffee.

Three ingredients. Nothing else. 🥚

Classic Pan di Spagna — the Italian sponge that rises on eggs, flour and sugar alone. No butter, no oil, no baking powder. All that height comes from air whipped into the eggs, which is also why it drinks up syrup and cream so well.

The sponge is naturally dairy-free, which makes it a good base for celebration cakes when someone at the table can't have dairy. Fillings can be made dairy-free on request.
