We explore and unfold exceptional coffee experiences, in a manner that gives better living conditions to coffee farmers across the globe. La Palma is a family farm spanning 9 hectares of steep mountainside. Luis Edgar’s journey into coffee began with a genuine passion for the crop and a drive to produce something exceptional. Over the years, he has developed a deep understanding of cultivation and processing.

At Coffee Collective, we have long-lasting relationships with farms, often over a decade. We value these mutual relationships and stay open to create new ones.

And while price transparency cannot be seen as an end in itself, we are convinced that it plays an integral role in the long-term process of countering the exploitative structures in today’s coffee market.

Introducing John, our new Head of Sourcing, in this month’s subscription video.

We are very excited to have John on board at Coffee Collective and to continue building strong producer partnerships together. He will also be selecting the coffees for our subscribers, where we get to share smaller lots and special roasts not always found on our regular menu.

The full video will be released on our YouTube channel on Thursday, 28 May, when these coffees are shipped to our subscribers.

Nothing is left to chance with this coffee. Las Flores, the team behind Peñas Blancas, has mastered the art of pushing flavour development to its fullest through precision and expertise.

The result is an exceptionally aromatic and fruit-forward cup. It is complex, refreshing with notes of rosehip, jasmine, and lemongrass.

Peñas Blancas Gesha is available in all coffee shops and online.

Our Plot espresso launching tomorrow, 15 May.

Our Plot is a long-term coffee project grown on land provided by Daterra. The idea was straightforward: to show that quality coffee can be grown with a lighter footprint on the planet.

Increased biodiversity is a core criterion for the project. The focus is not only on reducing impact, but on maintaining the long-term health of the land.

This is how Julius, barista at our Trianglen shop, brews it:

Dose: 19 g
Brew weight: 38 g
Extraction time: 25 sec

Resulting in a full bodied and fruity cup with notes of milk chocolate, nougat and mixed red berries.

Tip: Go a bit coarser to highlight the fruitiness even more.

A festive day in Copenhagen

Copenhagen Marathon is on, and we are here for it! Our Trianglen shop is right by the start and finish line, cheering the runners on with refreshments for the supporters.

Our head baker, Mila, has created a lemon cake for the season in bloom.

Light and fresh, with bright citrus acidity balanced by sweetness, it is finished with a lemon and Earl Grey glaze to really hit the spot.

Mila recommends pairing it with an espresso-based milk drink such as a cappuccino or latte, balancing the citrus notes with sweetness and texture from the milk.

Freshly baked at our bakery in the heart of Nørrebro and available in all our coffee shops around Copenhagen.
