Chicken Cutlets
These have been taking over my Instagram feed so I had to try them out. I only made ONE chicken breast and it made all of these little cutlets! I like to take shortcuts and simplify recipes so this one was actually really easy and my kid LOVED them! Great to snack on, put on salads or just replace chicken nuggets with!
Cut your chicken breast into thin slices. Then pound them out paper thin. Just use a mallet and give it a couple smacks.
I only tried one chicken breast with this, so if you are cutting and frying more you will need more egg mixture!
In one bowl add an egg and a splash of milk and whisk it up. Place your chicken in the mix.
In another bowl combine some breadcrumbs (I used GF, but any store bought breadcrumb will do), with a big handful of Parmesan cheese and some Italian seasoning.
Take the chicken out of the egg, and press it down into the breadcrumbs - the key is to use some muscle and really press it into the crumb. Do them all and set aside.
Heat up a pan with oil - and heat it up over medium high until it is HOT - the chicken should sizzle! I used avocado oil - if you use canola you can go that route too.
Fry on each side until brown and crispy. Don’t f$&k with it! If it won’t flip easy it isn’t ready and you will wreck the coating. This is going to fry quick because the chicken is so thin. A couple minutes max on each side. You will know!
Place on a paper towel and enjoy!

My first season at the golf course is coming to and end, and my heart is SO full.

After the fire at the Lunchbox, the golf course seemed like a great transition “job” to get me by while I figured out my next move. But holy moly did it turn into so much more. I found an incredible team, new friendships, so much laughter, and created a new community that welcomed me from day one.

Yesterday my girls surprised me with a goodbye gift and I don’t think they realized just how much they meant to me. I cried saying goodbye to them because I will truly deep down miss this team. Every early morning, every busy tournament, every rainy day, every challenge we tackled together made this one of the most rewarding experiences of my career.

To the kitchen staff, servers, bartenders, grounds crew, pro shop, board members, management, my lunchbox clients who popped in for bowls, and current golfers - thank you for reminding me why I love this industry so so much. I feel very proud of myself and all of us as a team.

Now it’s time to pour into the next adventure! Follow along the next few weeks as we get prepared to open your new favorite Weyburn lunch spot ❤️

New beginnings are exciting - but man I am going to miss this crew.

Ryan has been such an important part of both The Lunchbox and our golf course team. She is one of those people who quietly makes everything better. She is incredibly hardworking, dependable, kind, and always willing to help wherever she’s needed.

I am so proud of everything you’ve accomplished and I can’t wait to see all the amazing things your future holds. Thank you for everything you do for our team - we are very lucky to have you! And we cannot wait to celebrate your Senior Assassin Win 🥇!!!

High Protein Broccoli Cheddar Soup
This was so yummy! And perfect for my little girl who is in a phase of “hating meat” right now.
- 1 yellow onion, diced
- 1 large carrot, diced
- 1 celery stalk, diced
- 2 garlic cloves, minced
- 2 tsp paprika
- 2 tbsp gf flour (or regular flour)
- Cooking oil
- Salt and pepper
- 5 cups broccoli, use the stems too, chopped
- 4 cups broth
- 2 cups milk
- 1.5 cups cottage cheese, blended smooth
- Cheddar cheese (I’ll be honest I didn’t measure this, I just grated it right into the soup, stirred, tasted, added more, repeat)
Heat a soup pot over medium with some oil. Sauté the onions, carrots and celery for 5 minutes. Add the garlic. Sauté for a minute. Add the paprika and flour and stir. Add the broth and broccoli. Bring to a simmer for about 10 minutes or until the broccoli is tender. Add the milk, warm over low heat. Add the cottage cheese. Stir. Add the shredded cheese (as much as you want!). Season it up with more salt and more pepper.
