Rich flavours for resilient futures: Delight in the story of the sisterhood that makes delicious coffee.

In Todos Santos, a sisterhood of 276 women coffee farmers are known as 'Mujeres luchando por un mejor futuro,' (Women Fighting For a Better Future). They formed to support each other as many of the men left the community to work in the US. Today the sisterhood manages their farms and supports their families, significantly improving their community's quality of life while creating a delicious coffee.

Huehuetenango is one of Guatemala's eight coffee-producing regions, known for its rugged terrain and high elevations suitable for coffee cultivation. The unique micro-climate, created by the interaction of dry winds from Mexico and cool highland air, allows coffee to thrive at high altitudes. The region's abundant rivers enable farmers to process their coffee on-site, resulting in beans with a rich body, high acidity, and diverse fruity flavours.

Rich and comforting in flavour, with notes of fine drinking chocolate, honey comb, raisin, purple plum.

We had some very special guests visit the cafe yesterday 🥹 we believe they’re the j19’s based on information found on the Ocean Conservancy’s website https://www.orcaconservancy.org/meet-the-southern-residents

We often get all sorts of wildlife that pass through our harbour patio; swallows, ducks, dogs, and even the occasional otter. Orcas were very unique visitors!

ATTENTION STINKY CHEESE LOVERS!! We’d like to introduce you to some of our favourite wash rind cheeses.

Washed rind cheese refers to cheeses that are literally washed during aging. This can be done with salt brine, beer, wine, or spirits. This process builds a sticky, orange-pink rind and creates a pungent aroma and deeply complex flavours.

We recommend leaving out your cheese to come to room temperature to experience the full flavour profile of the cheese!

Juan Carlos’ coffee journey is one of perseverance. After working years on various farms, he bought his own plot of land. The farm wasn’t ideal for coffee as it was overgrown scrub land, but he nurtured the soil by planting beans and fruit. It’s taken years to convert the soil, but now Juan has fullfilled his dream of producing his own high quality coffee.

Juan owns El Pedregal farm (1920 masl) in Tarqui, a town in Huila Department in Southern Colombia. This lot consists of 100% Tabi variety, a hybrid of the two parent strains of Arabica: Typica and Bourbon, combined with Timor. It was designed to combine the disease resistance of Timor with the superior cup quality of Typica and Bourbon lines.

We are excited to share this coffee with you and celebrate Juan’s perseverance to make his coffee dreams come true.

Join us for this week’s free public tasting and new Coffee from
Colombia: Juan Carlos Osorio. We are excited to share this coffee with
you and celebrate Juan’s perseverance to make his coffee dreams come
true.

Juan Carlos’ coffee journey is one of perseverance. After working years
on various farms, he bought his own plot of land. The farm wasn’t ideal
for coffee as it was overgrown scrub land, but he nurtured the soil by
planting beans and fruit. It’s taken years to convert the soil, but now
Juan has fullfilled his dream of producing his own high quality coffee.

The fresh picked cherry is first fermented in a concrete hopper for 12
hours. After a first fermentation, they are pulped and fermented again
for another 40 hours in plastic bags. Finally, the parchment gets dried
18 to 20 days before final sorting and bagging.
