π₯£ Ash Reshteh β A Taste of Ancient Persia
Ash Reshteh is one of the oldest and most iconic dishes in Persian cuisine, with roots that trace back centuries to ancient Persia. Similar herb and legume soups were prepared long before modern times and gradually evolved into the beloved Ash Reshteh enjoyed today. The noodles, known as reshteh, symbolize the paths and journeys of life and are traditionally associated with good fortune, success, and new beginnings. For this reason, Ash Reshteh is often served during Nowruz (Persian New Year) and family celebrations.
This hearty Persian soup is made with fresh herbs, spinach, lentils, chickpeas, beans, and traditional Persian noodles. It is topped with caramelized onions, garlic, mint, and creamy kashk, creating a rich aroma and an unforgettable combination of savory, tangy, and comforting flavors.
