Dal palak is an Indian dish made with spinach, lentils, spices and herbs. My recipe goes in 6 simple steps :-
1) Mix and soak Toor Dal, Chana dal and Masoor dal in the proportion of 1:1:1 for about 4-5 hours.
2) Pressure cook the lentils with some turmeric, salt and oil.
3) Finely chop 1 onion, 1 tomato, 250 grams spinach, 1 inch ginger, 14-15 cloves garlic, 2 green chillies.
4) Add 2 tbsp ghee in a pan and add 1/2 tbsp cumin seeds, 1 tea spn asafoetida, 3 red chillies, ginger, garlic and onion. After the onions are cooked add tomato and add dry spices (1-2 tea spn red chilli powder, 1 tea spn garam masala and salt.
5) Put the pressure cooked lentils in the pan and add water. After the ingredients come to a boil add the finely chopped palak. Cook for 10-15 mins.
6) Tadka - Add 4-5 tbsp of ghee/butter to another pan and add 1 tbsp of cumin seeds and 1 tbsp of kashmiri red chilli powder. Add the Tadka to the boiled boiled lentils.
Serve it with Paratha/ Naan! Do add some lemon juice!

Guacamole 🥑 - I am really in love with this recipe, guys do try!
My recipe goes in 2 simple step:-
1) Peel 3 avocados and finely chop 1 onion, 1 tomato, 1/2 bunch of coriander and 3-4 green chillies.
2) Mash the avocados in a bowl using a fork (don’t make a smooth paste, keep it a little chunky), add the onion and tomato. Finally, add 1 tea spoon salt and half a tea spoon black pepper. You can also add lemon if you like sour taste!
Serve it with Nachos/pita bread or toast it with bread!

Masala Idli - A very easy and quick recipe using leftover idlis. My recipe goes in 3 steps -
1) Cut 5-6 idlis into small pieces.
2) Heat oil in a pan, add cumin seeds, mustard seeds, curry leaves, turmeric and asafoetida. Add peas (you can also add onions and tomatoes if you like) and idlis.
3) After 2-3 minutes, add 1 tea spoon red chilli powder, 1 tea spoon sambhar masala, 1 tea spoon pav bhaji masala and salt.
Serve it with ketchup/coconut chutney!

Chana masala or Chole originated in northern India. Chana masala is a delicious & spicy Indian curry made by cooking chickpeas in onion tomato masala gravy. My recipe goes in the following 5 steps -
1) Soak 2 cups chickpeas and 1/2 cup chana dal overnight (Ratio - 4:1)
2) Pressure cook the soaked ingredients with a cinnamon stick, small tea bag, 2 black cardamom, 1/2 tea spoon baking soda, 3 cloves, 2-3 gooseberry and some salt. Add water and oil and cook for 5-6 whistles.
3) While the chana cooks, add 4-5 tbsp oil to a pan. When the oil heats up, add a bay leaf and 2 finely chopped onions and fry until they turn golden. Add finely chopped 1 inch ginger and 10-12 garlic cloves, sauté until the raw smell disappears. Then add 2 finely chopped tomatoes. Fry until they turn completely mushy and soft. Then add red chilli powder, turmeric, garam masala and salt.
4) Take out the pressure cook ingredients and and add dry spices to it including 2 tea spoon pomegranate powder, 1 tea spoon cumin powder, 2 tea spoon coriander powder, 1 tea spoon dry mango powder, 1/2 tea spoon pepper, 1 tea spoons black salt and 1 n 1/2 tea spoon garam masala. Pour 3 tbsp hot ghee over the dry spices and mix it.
5) Finally, add the pressure cooked ingredients in the onion tomato gravy and add some water. Mix everything well and bring it to a boil. Lower the flame and simmer for 5 to 6 minutes or until it reaches a desired consistency.
Serve with paratha or naan!

Palak Paneer - It is one of the most popular Indian curries, which is made of pureed spinach and paneer (Indian cottage cheese) cooked in a medley of spices.
My recipe goes in 4 simple steps :-
1) Boil spinach and tomato (Ratio - 1 tomato with 1 bunch of spinach about 200 grams). Once boiled rinse it with cold water and grind it to make a smooth paste.
2) Finely chop 2 onions, 9-10 garlic cloves, 1 inch ginger, 2 greens chillies.
3) Put 3-4 tablespoons butter/ghee in a pan and add 3 cloves, 6-8 black pepper, 2 red chillies, 1 black cardamom, 1 cinnamon stick, some cumin seeds and the finely chopped garlic ginger and green chillies. Once the ingredients turn golden brown add the onions. Sauté until the onions become golden. Then add the spinach paste to it.
4) After the spinach starts to boil, add dry spices (including red chilli powder, garam masala and salt) and cubes of paneer. Add some water and let it cook for 2-3 minutes more.

Idli - Idli is one of the most healthiest and popular South Indian breakfast dish. These are soft, light, fluffy steamed round cake made with a ground, fermented rice and lentil batter.
My recipe -
1) Take urad daal and rice in the ratio of 1:3. Along with urad daal also add sone fenugreek seeds. Soak it over night.
2) Grind the soaked ingredients by adding some cold water (double the quantity of the rice and urad daal) in small quantities.
3) Leave the batter for fermentation for around 8-10 hours.
4) Grease the idli mould with oil/ghee. Gently and lightly swirl the batter. Now with a spoon pour portions of the batter in the greased idli moulds.
Tip: As per your preference you can add veggies to the batter. Here I have added coriander, mustard seeds and salt.
5) Take your idli steamer or pressure cooker or electric cooker or Instant pot. Add 2 cups of water and heat the water until it comes to a light boil. Keep the idli mould in the steamer or pressure cooker. Steam for 10-12 minutes.
Serve with coconut chutney and sambhar!

Pav bhaji is an Indian fast food consisting of a spicy vegetable gravy served with soft dinner rolls.
To make my version, specifically the bhaji, it goes in 3 steps -
1) Pressure cook potatoes, peas, tomatoes, carrots and beet root for 5-6 whistles (Ratio-3:2:2:2:1). Add salt, water and some oil to it.
2) Sauté finely chopped onions, tomatoes and capsicum (Ratio-2:1:1) in lots of butter ( ). Add Pav bhaji masala ( ), Kashmiri red chilli powder ( )and kasoori methi ( ). Add the pressure cooked veggies and use a masher to form a fine gravy. Keep adding water to reach the desired level of consistency.
3) Make a fine paste of garlic cloves and soaked kashmiri red chillies (Ratio-1:2). Finally, add this paste to the bhaji.
Serve the bhaji topped with butter and raw onions.

Ras Malai - One of the most famous Bengali dessert. This is made by curdling the milk with vinegar to make chena. The water is then strained and the chena is mashed till it becomes smooth. Once the chena reaches the desired level of smoothness, it is made into small flat balls and boiled in sugar syrup for 10-12 minutes. Once done, rest them in thickened milk or rabri. Refrigerate for 2 hours, garnish them with nuts and serve chilled.
