Barrie’s food has been shaped by years of travel and culinary exploration, experiencing the cuisines of Southeast Asia, Italy and other parts of Europe, Africa and North Africa, and bringing those influences and techniques home to Barbados to create his own distinctive interpretation of Caribbean cuisine.
Before returning home, Barrie also founded and operated Pop Up Barbados in London from approximately 2008 to 2019, a popular Barbadian supper club, pop-up dining concept and private catering service which received extensive media attention during its years of operation.
