🍎 Recipe

Apples

* 700–800 g apples (4–5 medium), diced
* 1 tbsp lemon juice
* 1 tsp cinnamon (optional)

Batter

* 3 large eggs
* 150 g sugar
* 120 ml milk
* 100 ml neutral oil or melted butter
* 200 g plain flour
* 10 g baking powder
* 1 tsp vanilla extract
* Pinch of salt

Method

Mix apples with lemon juice and cinnamon. Spread into a lined baking tray. Whisk eggs and sugar until pale. Add milk, oil and vanilla. Mix in flour, baking powder and salt. Pour over the apples without stirring. Bake at 180°C (170°C fan) for 40–45 minutes. Cool slightly and dust with icing sugar.
