Μελιτζανοσαλάτα 🍆 Eggplant Dip
Quick & Easy & Delicious

2 lrg eggplants - Char grilled or roasted
1/2 sml brown onions finely chopped
1 lrg clove of garlic finely chopped
1 handful of parsley finely chopped
1 handful of dill finely chopped
100gr Greek Feta crumbled
50 ml olive oil
2 tblsp red wine vinegar
Salt & Pepper to taste
