I spent years thinking I’d left accounting behind to make burgers. Turns out, I brought a lot more from Sri Lanka than I realised.

The way we build flavours. The layers. The complexity. The obsession with getting things right. Never cutting corners.

Even making just 150 house-made buns a day instead of chasing bigger numbers.

None of it was really a business strategy. It’s just how I grew up understanding good food.

11 years into The Resistance, I’m only just connecting the dots.
