Fresh isn’t always fresh — it’s often just thawed.

Most supermarket meat is wet-aged in vacuum packs for 1–4 weeks, then spends days in transit, gets cut and displayed for several more days, and if it doesn’t sell it’s often repurposed or frozen anyway.

When you buy direct from the farm, the process is simpler and more transparent: we age the beef, then flash-freeze straight after cutting to lock in quality and freshness right away. From there, it’s in your hands — you choose when it’s thawed and eaten.

Frozen doesn’t mean lower quality. It often means less handling, less time sitting around, and a fresher product overall.

Bello Beef tallow meets, the healthiest way to cook and enjoy potatoes 🥔

Cooking potatoes in beef tallow is the old-school way because it’s a stable, traditional fat that handles high heat well, giving you crisp edges and a rich flavor without relying on industrial oils. Nutritionally, tallow is mostly saturated and monounsaturated fat and is relatively low in polyunsaturated fats, which makes it less prone to oxidation during frying/roasting - an advantage when you care about what happens to oils at high temperatures.

By contrast, many seed oils (like soybean, canola, sunflower, safflower) are higher in polyunsaturated fats, which can oxidize more easily with heat, light, and storage - so people who want to minimize oxidized fats often choose to avoid them for cooking. If you want a “traditional potato” that’s simple and satisfying, tallow is a straightforward, heat-stable choice that many consider one of the safest fats for high-heat cooking.
