Karantikaโs story :
began in the 1500s at the Santa Cruz Fort in Oran. Spanish soldiers were under siege and faced a massive food shortage. With only chickpea flour, water, and oil remaining, they created a simple baked meal to survive. They named it โCalenticaโ because it had to be eaten while it was hot. Local Algerians later adopted the recipe and transformed it into a beloved national staple. They added eggs to improve the texture and cumin to perfect the flavor profile. What started as a desperate military ration is now the heart of Algerian street food culture. Today, it stands as a delicious bridge between Oranโs Spanish past and its vibrant Algerian present.
