Stuffed Potatoes & Artichoke Hearts In Tomato Sauce:
Ingredients-
Beef:
800g Ground Beef🥩
1 Chopped Onion
Handful Pin Seeds
1 Tsp 7 Spices
1/2 Tsp Cinnamon
1/2 Tsp Sumac
2 Tbsp Olive Oil
Salt🧂& Pepper To Taste
Tomato Sauce:
3 Blended Tomatoes🍅
2 Minced Garlic Gloves
2 Tbsp Tomato Paste
1 Bouillon Cube (I used Maggi Beef Cube)
1 Cup Water💦
2 Tbsp Olive Oil
Salt🧂& Pepper To Taste
1/2Kg Small Potatoes🥔
1/2Kg Artichoke Hearts
Butter For Coating
Potato Seasoning Of Your Choice
Instructions-
Peel potatoes & cut little from both bottom sides to have a flat base then hollow their insides
Melt butter in a bowl & add seasoning
Line potatoes on baking sheet & brush with seasoned butter
Bake for 10 minutes on each side in a preheated oven
Meanwhile, heat 2 tbsp olive oil & sauté garlic until fragrant then add tomato blend,tomato paste,bouillon cube, water, salt & pepper & simmer for 10 minutes over low heat then transfer to baking platter
In another pan, heat 2 tbsp olive oil then add onions & pine seeds & sauté until tender
Add meat, season with salt,pepper,cinnamon & 7 spices & cook well
Turn heat off & sprinkle sumac
Boil artichoke hearts is hot salted water for 10 minutes then drain
Stuff potatoes & artichokes with meat mixture & arrange in platter over tomato sauce
Cover with aluminum foil & bake in a preheated oven for 30 minutes or until they are cooked
Serve with vermicelli rice
